Skyteam Ace 125

The Skyteam Ace 125 is classed as a production bike, but looks more like a one off. Designed after the Honda RC110, it does feature fuel injection, disk brakes and modern suspension.

In other words, it manages to add modern niceties whilst maintaining that classic look and (probably - I haven't ridden it) handling. And boy, is this ever a looker.
